Kosher Plum Tort


1 cup all purpose flour (cake)

1 teaspoon baking powder

1 cup sugar

2 tablespoons of sugar

125 grm nuttelex at room temperature

2 large eggs

15 small AussieĀ  plums halved and pitted

1 lemons juice only

1 teaspoon cinnamon


1: Preheat the oven to 160C. Spray a medium sized baking dish or 23cm springform tin with non stick spray and line the bottom of the dish with baking paper. (I used a medium sized foil roaster)

2: Sift the flour, baking powder and salt in a bowl

3: Using an electric mixer cream the nuttelex and sugar until light and fluffy. Now add the eggs and beat until combined the on a very low speed add the dry ingredients and mix until just combined.

4: Pour into your prepared baking dish and smooth the top. Then arrange the plum halves skin side up evenly distributed in the dish. Sprinkle over the lemon juice cinnamon and sugar.

5: Bake for 45 to 50 minutes or until a deep golden brown.

Allow to cool to room temperature before removing form the dish. This can be made a few days in advance. To glaze I mixed some coconut cream with icing sugar.

Any fruit can be used.
